It is not always easy for my boyfriend and I to find a recipe we both love. He’s quite a picky eater and does not love vegetables as much as me. So, when we do find something you can be sure we’ll be making it over and over again. Like this delicious dish I found on Pinterest. I have translated it below for the non-German speakers.

Ingredients for two people:

200 g glass noodles
250 g salmon
1 head broccoli
150 g sugar snap beans
1 tbsp fresh ginger
2 cloves of garlic
1 bunch spring onions
3 tbsp sesame oil
50 ml soy sauce
100 ml hoisin sauce
2 tsp sambal oelek
1 tsp honey
1 tbsp sesame seeds
1 handful cashew nuts
Salt, pepper to taste

Step one

Cook noodles according to packet description.

Step two

Grate your ginger and add 2 tbsp sesame oil, soy sauce, hoisin sauce, sambal oelek and honey. Dice your salmon and cover with half of the marinade you just made.

Step three

Wash and cut up all your veg.

Step four

Fry your salmon in a pan (or wok if you have one). Once it is done, transfer to a bowl and cover with aluminium foil.

Step five

In the same pan heat up your sesame oil, garlic and the rest of your veg. Season with salt and pepper, then pour over the rest of the marinade and reduce for two minutes.

Meanwhile start roasting your cashew nuts.

Step six

Combine noodles, veg and salmon and top with sesame seeds and cashew nuts. Enjoy!
